Here is my Menu Plan for the week of October 10 - 16
Monday: Breakfast for Dinner - Scrambled Eggs and Turkey Bacon
Tuesday: Lasagna Soup, Wheat Rolls
Wednesday: Chicken Soft Tacos, Taco Rice
Thursday: Slow Cooker Caesar Sliders, Roasted Red Potatoes
Friday: Tacos In Pasta Shells, Salad
Saturday: Eat Out - Pizza
Sunday: Slow Cooker Chicken Cacciatore, Noodles
Tacos In Pasta Shells
18 Jumbo Pasta Shells (about 1/2 of a 12 oz pkg)
1 Pound Ground Beef
1 3-oz Package Cream Cheese, Cubed
1 tsp Chili Powder
1 Cup Salsa or Taco Sauce
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Monterey Jack Cheese
1 1/2 Cups Crushed Tortilla Chips
Chopped Green Onions (optional)
Cook pasta shells according to package directions and drain.
Brown ground beef, stirring to crumble. Drain. Stir in cream cheese and chili powder. Simmer 5 minutes.
Preheat oven to 350º. Fill shells with beef mixture. Arrange in a greased 13 x 9 baking dish. Spoon salsa (or taco sauce) over shells. Cover with foil and bake for 15 minutes. Uncover, top with cheeses and tortilla chips. Bake for 15 minutes longer. Sprinkle with green onions if desired.
