Meal Plan Monday

Meal Plan for the week of March 26 thru April 1

Monday - Tortellini Soup, Wheat Rolls

Tuesday - Slow Cooker Honey Sesame Chicken & Rice

Wednesday - Taco Pizza, Salad

Thursday - Slow Cooker Chicken, Noodle Pudding

Friday - Eat Out

Saturday - Salsa Chicken, Mexican Rice

Sunday - Foil Pack Taco Chicken w/Potatoes

I found this recipe in Country Living Magazine and it sounds delicious. I'm going to make it for the first time this week.

Noodle Pudding

1 Cup Panko Bread Crumbs
1 Tbs Unsalted Butter, Melted (plus more for greasing dishes)
8 oz Wide Egg Noodles, Cooked & Drained
1 Cup Sour Cream
1 Cup Cottage Cheese
1/2 Cup Grated Sharp Cheddar Cheese
1 Medium Onion, Finely Diced
1 Garlic Clove, Finely Chopped
1 Tbs Worcestershire Sauce
1 tsp Salt
1/2 tsp Red Pepper Flakes

Preaheat oven to 350ยบ. In a small bowl, toss panko with melted butter and set aside. Butter six 1-cup ramekins.

In a large bowl, combine remaining ingredients. Divide noodle mixture between prepared ramekins and top with reserved bread crumbs. Bake for 1 hour.
